Gluten-free bread with chickpea flour and hemp

Ingredients:

200 g of rice flour
200 g of chickpea flour
100 g of hemp protein
1 envelope of yeast
1 pinch of salt
1 teaspoon of baking soda of sodium
Warm water: necessary amount

Directions:

Place the three flours in a bowl and mix well. Make a well in the center and place the yeast. Add 4 tablespoons of warm water to the yeast and mix well with a spatula to activate it. Add the salt and baking soda over the flours but without coming into contact with the yeast. Add the rest of the warm water and mix the dough well until it reaches a sticky consistency that cannot be kneaded on the table. Cover with plastic wrap and let it rest for 4-5 hours. Pour the dough into the rectangular mold and let it rise for 1 more hour. Bake at 180° for approximately 1 hour.
